My dear Danielle and I made tacos for Cinco de Mayo. Oh dear god we can cook! Don't worry, I'll talk you through a white girl's carne asada dinner. Have a recipe!
Flap meat Garlic (Danielle decided roasting the garlic would be awesome and it is. Put garlic in a pan or dish with some oil and bake in the oven till it's a teeny bit golden.) Lime Onion Bottle of beer (Dos Equis or cerveza of your choice) Tequila (blanco es bueno) Seasoned salt Dill (because I love it so) Worchestershire sauce Pepper Chili powder A lot of this is added "to taste". It's all a matter of preference. |
Toss it all in a bag and put it in the fridge for a few hours to marinate. A note on the tequila: not too much. A shot or two will suffice. After all, it's just for flavor. If you don't know already, the alcohol will cook out and you'll be left with tequila (and beer) flavored meat. It's definitely a good thing. D-definitely good. Definitely. |
When it's almost time to grub, get a good hot BBQ going and slap the meat on there. I like my meat rare (by this I mean I want it to moo and bleed as I cut it), but normal people like it cooked fairly well. Matter of preference... But my way is always better.

We used these awesome "handmade" (I dunno if they were or not. Ralph's had them and they looked tasty. They were definitely tasty.) corn and wheat tortillas for our tacos and organic white corn tortilla chips for the guacamole. I had three tacos. I was ridiculously full.
That, my friends, was just what we had for dinner. I also baked some strawberry margarita cookies! I took a basic sugar cookie recipe and made it better. Recipe time again:
Cookies:
1 cup butter
1 cup sugar
1 egg
2 1/2 cups flour (I want to use coconut flour next time so these are gluten free and extra tasty)
1/2 tsp baking soda
1 1/2 tsp vanilla extract
1/4 tsp salt
1/2 tsp cream of tartar
1 1/2 limes (juice and zest)
2 shots tequila blanco (approximately... I didn't measure... measuring... pffft!)
Sea salt for "salting the rim" (as I so cleverly call it)
Frosting:
Powdered sugar (a bag or two... I know it sounds like overkill, but it really isn't. You'll find out, trust me.)
Milk (as needed)
Butter (roughly a cup)
Strawberry jam (seedless is preferred)

Roll into small balls and flatten slightly. Time to "salt the rim". Lightly shake some sea salt over the fattened dough balls. I decided it was a good idea since margaritas have salt on the rim of the glass. I'm just too damn clever. It's working out quite well for me. Bake the cookies until they are set and golden brown on the bottom. |
I've been dying to make these again, but see above that I am lazy. I actually have been baking lately and really need to post some recipes for you all. The above meal and dessert was utterly phenomenal and I can't wait for our next shindig so I can be all domestic and shit. Hopefully I'll actually keep up on this blogging thing this time. The site I use to create these pretty posts was being a horrible bastard for a while and I was unbelievably frustrated...
